Vegan MoFo: The Spice Must Overflow: Sumac

There must have been a point one time in my life where I ran out of sumac. Clearly, it had a lasting effect on me.

Sumac is the operative ingredient in zaatar, a blend of spices and sesame seeds popular in Jordan, Syria, and Israel, among other places (but those are the kinds of zaatar I have right now). Zaatar is the coolest thing you could mix with olive oil and put on a piece of flatbread. Sumac is also an important part of any really good tabouleh. Otherwise, it's just tabouli. Ok, now I'm just goshing with you.

Anyway, when we first moved to Portland, we made the same complaint every time we went to a middle eastern restaurant and tasted it in our food: why is there no sumac in this town? And then we'd say, well, they obviously have it, so where do they get it? But then not ask. And then forget to look anywhere else but the coop and New Seasons. But I don't think we've ever been out of sumac, ever. We just needed to look in our cupboards, which this weekend, I finally did, and 6 bags of sumac I did find. Now they're all together in one bag, so if I ever complain to you and say I'm out of sumac, shake me and say:

"No! No you're not!"
