On Saturday, I went to the woods, searching for mushrooms. Believe me when I tell you that it gives me pains not to be able to visit the woods more often. I need to get my fix on Forest Park, and it's good (believe me, it is goooood), but I don't know, not quite the same.
So we went out in search of the kind of mushrooms that you can eat before they eat you (beware false chanterelles!), finding way more in the way of funny-to-look-at and or looking-deadly-poisonous than juicy bites of joy. We checked out a couple of places with no clear leads, just enjoying the things we saw. Woods nerds.
Third place, we finally saw some lobster mushrooms, but we were hesitant about their quality. Little did I know, given my relative inexperience (my claim to fame is falling on top of a huge chicken of the woods and some random morels on a walk, mostly), that there is a dirty little secret in mushrooming. I'm not going to tell it to you.
But I will tell you that we discovered on Tuesday when we started to prepare our mushrooms for Wild Mushroom Lasagna (!!) we only were able to use a small portion of our delicious lobster mushroom and rushed to the coop (well, more like casually strolled for the second time) to get chanterelles for that full-on wild mushroom feeling. The combination of those is one I know well and love, and it didn't disappoint. Sharin taught me to dry roast the mushrooms, something I never tried, and that was super cool. We added fresh thyme from our backyard pot and then added them to the lasagna filled with cashew ricotta, pine nut cream (both from Veganomicon if you didn't already know), and gf lasagna noodles and spinach, topped with fyh and Yellow Rose parmesan, and baked for 40 minutes. Best lasagna OF MY LIFE! I mean it this time!
I forgot to take a picture while it was light, and I'm not going to show you a crappy picture of awesome lasagna, so check back tomorrow afternoon, k?

That lasagne looks delectable. I've always been interested in mushroom hunting, but always fearful, because my grandmother used to tell me this story about a family she knew growing up who all died after eating the mushrooms they had foraged (I think this maybe have been during the Depression).
