The original recipe makes 4 cutlets, but I quadrupled the recipe cause I don't mess. These are, of course, delicious (I had to taste one!), but that wasn't exactly a surprise since these have been made for me at least three times by Jess during cookbook testing. *I just got off the phone with my dad, not my mom, and when I told him about the Chickpea Cutlets and tried to explain what they were, my dad exclaims "Oh, Chickpea Cutlets! I ate those two nights last week!" Yeah, har har Dad!
